A few years ago, my husband and I drove through the tiny town of Battle Mountain, Nevada, and decided to stop for lunch at El Aguila Real<\/a>, where I tried Chili Colorado for the first time. <\/p>\n\n\n\n

It was served “enchilada style,” with the chili colorado wrapped in a burrito and smothered in enchilada sauce and melted cheese!<\/p>\n\n\n\n

How to Make Chili Colorado Smothered Burritos in an Instant Pot \/ Pressure Cooker<\/h2>\n\n\n\n

This Chili Colorado Burrito recipe will work in any brand of electric pressure cooker, including the Instant Pot<\/a>, Ninja Foodi<\/a>, or Power Pressure Cooker XL<\/a>.<\/p>\n\n\n\n

This pressure cooker recipe is inspired by Chef In Training’s Chile Colorado<\/a>, which calls for 8 hours in the slow cooker. My pressure cooker chile colorado cooks for 30 minutes at High Pressure, so you\u2019ll have dinner on the table in about an hour! <\/strong><\/p>\n\n\n\n
