I just wanted to leave this one warning: do NOT use the Rice/Grains settings.

There seems to be a built-in delay of about ten minutes on the Rice/Grains setting between when the float pops up and when the timer begins, which means rice, oatmeal, etc. are wildly overcooked and stick to the pot. Just use manual pressure cook instead.

Hi Alexandra – on the sous vide setting the lowest temperature is 77 degrees F which is 25 degrees C. The heat cycles off and on to maintain the temperature and doesn’t necessarily stay at a steady temperature. The heating element is in the center of the bottom so you’d have to be careful to stir the chocolate constantly. Is it possible to choose Sous Vide (which allows for lower temperatures) and choose a temperature with precision in 1 or 5 degree increments, or mist one choose one of the LE presets. Ideally, I would like to choose 29-30 degrees to about 45 degrees.

2. I have read in your evo review that it provides customization..So can you please explain that how the customization differs from ultra pot customization. What difference these two pots have in regards to customization?

3.does evo and ultra have no pressure mode?

Some models won’t let you set zero minutes, so you have to set it for 1 minute and then as soon as it reaches pressure and the 1 shows up, press cancel and release the pressure. I don’t know why Instant Pot didn’t make all models consistent.

Hi Monika,

Sorry I don’t know much about Instant Pots (I’m just about to buy my first one ;-)), but I don’t think you’ll need any specific gear for making Sauerkraut other than some (ideally larger) glass containers.

Since fermenting the cabbage to become Sauerkraut will take a few weeks anyway it probably also wouldn’t be very practical to do it in an Instant Pot, since you wouldn’t be able to use it for anything else in the meantime.
