Thanks for your note. Since I follow a vegetarian diet I am always trying to sneak some kind of protein into my soups. As you noticed–not this one though, except for the pumpkin seeds. I love both your ideas. To keep the smooth texture I’d try adding red lentils first–say 3/4 cup. Red lentil soups thicken as they stand so you definitely will want to add another cup or so of vegetable broth. To make up for the flavor dilution, round up all the other ingredients too. For quinoa, I’d cook it first and then stir in the cooked quinoa, however much seems right to you. Tri-color (aka rainbow) quinoa or black quinoa would be a pretty contrast.

At least I don’t think there is very much in it the way it is. I’m pretty active and also kind of lethargic a lot. Someone once asked me “Do you get enough protein?” Hence the reason for my question.
