Hi Kristen – you can use green lentils but they will take longer to cook so you may want to cook them for a few minutes before adding the other ingredients to avoid overcooking the potato.

I carmelized the onion, though I am not sure this was important. For black lentils to soften, I needed 11 minutes of pressure. When it was finished, it was soupy enough for me, so I added vinegar, but no beer. I also added in 1/2 tsp smoked paprika, which made it taste more like split pea soup with ham. Not necessary, but took it out of the ordinary. Next time, if I don’t plan to add smoked paprika, I will double the thyme. thank you!

Alcohol evaporates at about 160 degrees F. Alcohol residue from the beer is not an issue.

Thanks for this question. The recipe uses dried lentils–I changed the recipe to specify and I’m glad you pointed it out! If you use canned lentils you really wouldn’t really need a pressure cooker to make this soup!
