I drizzle a little bit of canola or olive oil on the top of the washed artichoke and then sprinkle about a 1/2 teaspoon garlic powder over it. Add about 1 cup water to the pot and let her cook for about 20 minutes. Yum with either mayonnaise or butter. However with my new Electric Pressure Cooker – it’s so much safer. I will have to try your’s with the lemon juice. I also do cut the big artichokes in half.

I love your new website. I have never even thought about cooking an artichoke in a pressure cooker. This brings back the memories of the my grandmother’s pressure cooker whistling and rattling away in her cheery kitchen.

Hi Lydia – I’ve never seen one explode, but I never wanted to get too close to my mom’s. I think a perfect pantry probably needs a new electric pressure cooker. 🙂

It seems so intimidating. I bought one a while back for $1.00 and just never used it. Left it sitting in the fridge until it went bad. lol. It may have helped if I had a plan for it!! 🙂

I’ve never thought of doing artichokes this way. Definitely something to put on the must-try list.

I have steamed artichokes before, but never seasoned the water. I used lemon to keep them from turning brown. I can’t wait to try this. I am gathering up the nerve to pressure cook. You are inspiring me.

Thanks for this wonderful blog!
